This is the last recipe I will share for National Nutrition Month, but I will share more in the future!

I saw this recipe in a magazine and decided to try it for my son for lunch – well, for all of us since we eat together. It was a huge hit and is a great, cool meal, especially for the warm summer months.


  • Mayonnaise
  • Chopped kalamata olives
  • Finely chopped scallions
  • Hummus
  • Pita bread
  • Cucumber slices
  • Tomato slices
  • Shredded carrots
  • Romaine lettuce


  1. Mix mayonnaise, olives, scallions, and a pinch of black pepper in a small bowl.
  2. For each sandwich, spread hummus on one slice of bread and spread the mayonnaise mixture on the other slice of bread.
  3. Layer the cucumber, tomatoes, carrots, and lettuce on top of the hummus.
  4. Top the sandwich with the mayonnaise slice of bread.


We also add slices of avocado and green peppers to the sandwich as well (or near the sandwich, to make it easier for my son to handle). My son just loves these!
